As we approach the final few weeks of summer, consider taking advantage of seasonal fruits and vegetables as much as you can. My favourite seasonal vegetable in the summer is the zucchini, a much underrated and super inexpensive vegetable that has so much potential. It does great as a side but can also star as the main course with just a little bit of creativity. Whether you pick up a few zucchinis at the store, your local farmer’s market or right out of your summer garden, keep reading for all you need to know about this vegetable, as well as some creative ways to cook with it!
About Zucchini – Health Benefits
Zucchini is in season from July through October, meaning that this is when you’ll find it to be the freshest, most flavourful and vitamin-packed of the year. For zucchinis, these vitamins include Vitamin C, Vitamin A and Potassium. They also happen to be a great source of fiber, which can improve digestion and lower your risk of heart disease.
A great thing about zucchini is that it can be spiralized into spaghetti noodles, or sliced thinly into lasagna noodles. This is great for anyone looking to decrease their carbohydrate intake and can be helpful in lowering blood sugar levels in those with type 2 diabetes.
This vegetable can be eaten raw or cooked, making it perfect for snacking, a tasty addition to salads or stir-fries, or an appetizing side dish. They always do well on the grill, or oven roasted, but can also be added to various baked goods for an extra daily serving of vegetables. If you’re like me and have a garden overflowing with zucchini, or you see them year round at the grocery store, it can be difficult to think of new and exciting ways to use this vegetable.
